Made by the Latteria Sociale Valtellina from April to November, this soft-ripened 100% goat's milk cheese is aged for merely 15 to 20 days. When fresh, this cheese has a snow white center and crumbly texutre with a soft, edible rind. As it ages, the cheese will begin to ripen. Pairs beautifully with fresh grapes, apples, pears and figs, or drizzle with honey and sprinkle with walnuts.
